Mediterranean Vegan Pizza
I spread hummus onto a vegan pizza crust and topped it with hummus, tabouleh, vegan tzatziki, chopped up pieces of the falafel, and kalamata olives. NOM NOM NOMS!
Hummus
1 can chickpeas
1 tablespoon tahini (sesame paste)
1 clove roasted garlic
2 tablespoons olive oil
pinch of salt
juice of 1/4 lemon
Drain and rinse the can of chickpeas. Peel the shells off the chickpeas. They just pop out when you squeeze them. This is kind of labor intensive but it’s worth it. It makes the hummus way smoother. Blend in a food processor with the rest of the ingredients. You can add more olive oil or even water to get the hummus to whatever consistency you prefer.
Tabouleh
bunches of fresh parsley (1 1/2 cup chopped, with stems discarded)
2 tablespoons of fresh mint, chopped
I medium onion, finely chopped
6 medium tomatoes, diced
1 tablespoon salt
1/2 teaspoon black pepper
1/2 cup bulghur, medium grade quinoa or cous cous could also be used
6 tablespoons lemon juice
6 tablespoons extra virgin olive oil
Soak bulghur in cold water for 1 1/2 to 2 hours until soft. Squeeze out excess water from bulghur using hands or paper towel. Combine all ingredients, except for salt, pepper, lemon juice, and olive oil. Sprinkle olive oil, lemon juice, salt and pepper on top. Serve immediately or chill in refrigerator for 2 hours before serving.
Falafel
can of chickpeas, drained
3 smashed garlic cloves
1 roughly chopped red onion
3 tablespoons chickpea or plain flour
TBS parsley
1 teaspoon hot chilli flakes
1 teaspoon paprika
1 teaspoon thyme
1 teaspoon coriander
1/2 teaspoon turmeric
1/2 teaspoon cumin
1 1/2 teaspoon salt
1/2 cup water
Blend all the ingredients in a blender or food processor until forms a thick paste. Shape into 1 inch balls and flatten slightly. Drizzle a pan with olive oil. Bake falafel at 425 until brown on top. About 15 minutes. Turning half way through.
Vegan Tzatziki
1\4 cup Vegenaise
1\4 cup tofutti cream cheese substitute
splash of soy milk
1 TBS lemon juice
1/8 cup cucumber grated/salted/squeeze water out
handful of finely chopped mint\parsley\or salad greens
salt and pepper to taste
Put the vegenaise, tofutti, soy milk, olive oil, and lemon juice in a bowl and stir until smooth. Add remaining ingredients and stir until combined. Chill in the fridge until you’re ready to use.
If you don’t want the tzatziki to be vegan just substitute the vegenaise, tofutti, and soy milk for greek yogurt.
