Black Bean Burger with Grilled Pineapple
It’s a blurry photo but a tasty meal!
About a week ago I was trying to come up with a healthy burger alternative to make for dinner. I decided to try to make my own version of a black bean burger with some seasonal summer touches. Instead of bread I placed the burger on a bed of greens and topped it with avocado, grilled pineapple, diced jicama, tomato, and a vegan jalapeno\cilantro cream sauce.
Black Bean Burger Patty
1 can black beans (drained and rinsed)
1 ear of corn (cooked and cut off the husk)
1 small sweet red pepper (diced)
1\4 small onion diced
1 egg
sprinkle of salt and pepper
1/4 cup chickpea flour (or whatever flour you want to use)
3 Tablespoons oatmeal
Directions- Put everything in a food processor and blend until the mixture comes together into a chunky paste. Shape mixture into burger size patties. Pan fry in a skillet with a little oil or pam. If you want to make this vegan then lose the egg and substitute with an egg replacer.
Jalapeno Cilantro Cream Sauce
I just mixed some vegan cream cheese with veganaise, diced pickled jalapeno, chopped cilantro, salt, pepper, and lime juice. Voila!
Cucumber Watermelon Juice
I juiced 3 cups of watermelon, 1 cucumber, 3 limes, and a handful of mint. I poured the juice into ice cube trays and after they were frozen tossed them into a glass of water. Garnished with cucumber slices and mint.
This was one tasty and refreshing healthy summer meal!
