Refrigerator Oatmeal (just like on Pinterest)
If you’ve seen the resent refrigerator oatmeal on Pinterest I’m sure you’ve been as hungry and jealous of it as I have. Usually I’m just too lazy to make any of the adorable things I pin from Pinterest on a daily basis, but I thought with all the summer berries on sale at Publix I just had to see what all the fuss was about. This recipe http://www.theyummylife.com/Refrigerator_Oatmeal uses oatmeal, fresh fruit, chia seeds, and milk. The pictures look awesome. But I didn’t have any chia seeds and I wanted mine to be a little more hearty. So I loosely followed the recipe from the Pinterest link but I added my own twist. My version used the same proportions but I used Almond milk instead of regular milk and muesli instead of plane oatmeal. I also added Kefir. (Did you know that this yogurt style drink is 99% lactose free and full of belly healthy probiotics? Oh and it’s delicious!) I chose strawberries and raspberries as my fruit and I sprinkled the finished oatmeal with milled flax seeds. It only took a few minutes to assemble these treats and I have a few days of breakfast already prepared.
